One career I think I would have gone for and enjoyed, if not for a medical condition, is US Coast Guard rescue swimmer. I'm a decent swimmer, though I could be better, and maybe that would have gotten me to be a better swimmer. Although, journalist, historian and folklorist also careers I would enjoy.
