Growing up? When does growing up stop? Kinda makes a difference because the books that impacted me most were all read in my late teens or early twenties. I'll take it that you mean as a child, which would end just before late teens. In which case I would say the Narnian series by CS Lewis. And, if I have to choose just one book, it would be The Voyage of the Dawn Treader. Steinbeck's The Log from the Sea of Cortez also springs to mind but that was through enjoyment, not influence.
