I think that you remember Kraft processed cheese food. The reason it tastes like plastic is because it contains only dehydrated whey protien mixed with flour and coloring agents and just enough water to make it easy to form into "slices". There is no actual cheese in those imposters. The American Cheese we have here in New Jersey and Philly is actual cheese. Made from whole cow's milk, no orange dye and slightly soft. It's so flavorful that when I first came out this way I didn't like it because I was used to mild cheddar. Since then I've gotten used to it. The New Jersey Dietz and Watson American Cheese tastes like a dream when it's melted. Nice velvety texture. Savory and almost a little meaty. Sorry, I'm off topic now and sound like a cheese ad. |
