This was a difficult one. Of course, Brussels sprouts spring to mind instantly, but the truth is I've come to tolerate them and quite look forward to their annual appearance at Christmas. Spinach was a bit hard to eat when young but, with time, became quite acceptable. Cucumber is the quickest route to indigestion known to science but, strictly speaking, it's not a vegetable and, in its "vegetable" form as courgettes or, if you must, zucchini, it's quite pleasant and innocuous.
I looked at all sorts of weird and wonderful things and eventually stumbled on the fact that rhubarb must be a vegetable since we eat the whole plant. But that's no good as I like rhubarb. In the end, I had to fall back on that old dependable, kale. The only question that then remains is: why would you eat it?
