I think it depends on your writing style. If you are a pantser - maybe multiple endeavors works for you. If you're a planner - probably one at a time in a systematic flow. I have parts of 13 books, I'm a pantser by nature, but had to train myself to be more of a planner. However when inspiration strikes I write down the framework of whatever story idea, then go back to working on my current project. Also, I'm sure there are others like me who have more of their work finished, but just haven't posted it.
Also, I find that when I get stuck on the current project, I can sort of recharge by setting that aside and working on something else for a while. I think it works for me, but I've yet to have a novel completed to submit for publication. Articles, and short stories, but not a novel.
