I can think of many stereotypes that would be offensive to some people. Those are obvious, and unless you are attempting to show your character as ignorant or biased then they probably wouldn't be in a story. The stereotypes I think we're using in the lesson is more along the lines of general beliefs about specific people. For example, the shoemaker that has holes in his shoes, or a tall race horse jockey, something along those lines. These are not offensive. We expect a shoemaker to have shoes in good shape, and jockey's are short and thin.
