I agree. Balancing all aspects of writing to please, but not to offend, is a daunting endeavor. I think we must write honestly, but keep those who might read it in mind. Stereotypes are used to some degree by all writers and should be used as necessary but should not be overdone. I don't think you offend by pointing out how people are, but by trying to paint them as something they are not.
